Chef Ayindé Howell brings nearly 30 years of plant-based cooking to The Mac Truck, a Los Angeles vegan food truck serving his signature California Soul Food. A lifelong vegan, Howell blends the Alabama soul food he grew up with, bold Caribbean flavors, and Southern California’s fresh produce into creative comfort food made entirely plant-based. Before launching The Mac Truck in LA, Howell built a career that included Hillside Quickies Vegan Sandwich Shop in Seattle, serving as Executive Chef at Jivamuktea Café in New York City, working as a personal chef for Grammy-winning artist India.Arie, and creating vegan dining experiences at Coachella. His signature Mac & Yease even reached Whole Foods hot bars and Costco shelves. Today, The Mac Truck brings Howell back to feeding Los Angeles with favorites like Classic, Jalapeño Cheddar, and Buffalo Broccoli Mac & Yease, Mesquite BBQ Tofu, Crispy Fried Oyster Mushrooms with Scotch Bonnet Ranch, Catfish-Style Tempeh, smoky Jalapeño Mac Quesadillas, the Crazy Jamaican Burger, Hush Puppies, greens, and Cucumber Ginger Salad. Rooted in Alabama soul, Caribbean flavor, and California creativity, The Mac Truck delivers a distinctly Los Angeles plant-based food-truck experience built around comforting, soulful food. And at the center of it all is Howell’s legendary vegan Mac & Yease, the dish that has defined his cooking for decades.
