Meet Nathaniel Harris

Nathaniel first fell in love with cooking on a step stool in his Grandmother’s kitchen and helping his Grandfather tend the grills and smokers. It began a lifelong fascination with the history of American regional and international BBQ techniques and the science behind them. Using the understanding of why the different approaches developed and why they work, has lead to a new style – California BBQ.

In Texas they say let the meat speak for itself. This is California, we have orchestras and choirs.

  • Pulled Pork

    Smoked over apple wood and served with homemade apple coleslaw

  • Smoked Spareribs

    Using naturally occurring bromelain, our ribs are scientifically more tender going into the smoker than other pit-masters can possibly achieve when finished.

  • Smoked Chicken

    Brined overnight then slow smoked over apple wood. Smoked chicken is not supposed to look this good. Takes the best techniques from North Texas and some great ideas from the far East.

  • Pulled Chicken

    Special Rosemary and juice brine overnight then slow smoked and hand pulled.

  • Smoked Chicken Wings

    Brined in our special brined, smoked over apple wood and then quick fried to order. Served with all of our homemade sauces and condiments.

  • Loaded Fries

    Double fried potatoes covered with pulled pork or chicken, spicy or mild bbq sauce, crema and fried jalapeño chips.

  • Loaded Mac & Cheese

    Mac & Cheese made with rendered bacon and 4 cheeses covered with pulled pork, spicy or mild bbq sauce, avocado crema and crispy jalapeño chips.

  • Pulled Pork Sandwich

    Served on a fresh bolillo roll with apple coleslaw. Tradition meets food science.

  • Smoked Chicken Sandwich

    Brined overnight in a special apple juice mix. Slow smoked for hours over apple wood and hand pulled. Served on a warm bolillo roll.

  • CCC (California Cowboy Caviar)

    A California take on a Texas vegetarian classic. 2 bean salad with vegetables and tomatoes in a garlic red wine vinegar dressing. Made even better with mango and topped with avocado. Served with Gluten free tortilla chips.

  • Smoked Santa Maria Tri Tip

    Slow smoked tri tip infused with the flavors of Santa Maria.

  • Tacos

    Pulled Pork, Smoked chicken or Mushroom medley with apple coleslaw, bbq sauce and avocado creama served on a sweet Hawaiian bread flour tortilla.
